  • 1 tbsp low-sodium soy sauce (or tamari for gluten-free)
  • 1 tsp toasted sesame oil
  • 1 tbsp cornstarch
  • 1 egg white
  • 2 tbsp vegetable broth or water
  • About 30 round dumpling or gyoza wrappers (3-inch / 7.5 cm size)

For the Dipping Sauce:

  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • Optional: pinch of chili flakes or a dash of sriracha


Instructions

  1. Prepare the Curry Dumpling Filling: In a large bowl, combine the ground beef, minced onion, garlic, ginger, curry powder, soy sauce, sesame oil, cornstarch, egg white, and vegetable broth or water. Mix thoroughly until all ingredients are evenly incorporated. Cover and chill the mixture for 15-20 minutes to let flavors meld and firm up the filling for easier handling.
  2. Assemble the Dumplings: Lay out dumpling wrappers and keep a small bowl of water nearby. Place about 1 teaspoon of the filling in the center of each wrapper. Moisten half the wrapper edge with water, fold over to form a half-moon, and press firmly to seal. Optionally pleat the edges for a traditional look. Arrange assembled dumplings on a parchment-lined tray, ensuring they don’t touch.
