Instructions

  2. Combine Dry Ingredients: In a large bowl, whisk together the almond flour, 1 cup of sugar, and lemon zest until evenly mixed and fragrant.
  3. Combine Wet Ingredients: In the bowl of a mixer, beat the egg whites until they hold soft peaks. Gently whisk in the almond extract to infuse the meringue with flavor.
  4. Fold Together: Carefully fold the beaten egg whites into the dry mixture, using a spatula to ensure the dough becomes moist and evenly combined without deflating the egg whites.
