Ingredients
Scale
Pasta
- 8 oz short pasta (rotini or elbow macaroni)
Dressing
- 1 cup sour cream (substitute with Greek yogurt for a lighter dish)
- 1 cup ranch dressing (homemade or store-bought)
Add-ins
- 1 cup cheddar cheese, grated (pepper jack can be used for spice)
- 6 slices bacon (cooked until crispy and chopped)
- 1/2 cup green onions, chopped (chives can be used as an alternative)
- 1 cup cherry tomatoes, halved (optional)
- 1 cup bell peppers, diced
- 1 cup grilled chicken (optional for added protein)
Instructions
- Cook Pasta: Boil salted water in a large pot and add the pasta. Cook until al dente, about 8-10 minutes. Drain and let it cool slightly to prevent the salad from becoming soggy.
- Cook Bacon: Preheat your oven to 400°F (205°C). Lay the bacon slices on a baking sheet and bake for approximately 25 minutes or until crispy. Remove and chop into bite-sized pieces.
- Prepare Dressing: In a mixing bowl, combine the sour cream and ranch dressing, whisking them together until smooth.
- Combine Ingredients: In a large bowl, toss the cooled pasta with the chopped green onions, grated cheddar cheese, and half of the crispy bacon pieces. Add diced bell peppers and cherry tomatoes if using; also add grilled chicken if desired.
- Toss with Dressing: Pour the ranch and sour cream mixture over the pasta and vegetables, tossing thoroughly to coat everything evenly.
- Chill for Flavor: For best taste, refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.
- Serve: Before serving, sprinkle the remaining bacon pieces on top. Serve the salad chilled or at room temperature as desired.
Notes
- You can substitute sour cream with Greek yogurt for a lighter, tangier dressing.
- Adding grilled chicken makes this salad a complete meal with extra protein.
- Use pepper jack cheese instead of cheddar if you prefer a little spice.
- Chilling the salad enhances the flavor but you can serve it immediately if short on time.
- Leftovers store well in an airtight container in the refrigerator for up to 3 days.
- Make sure to cool the pasta completely before tossing with dressing to prevent a watery salad.
