Ingredients
Scale
Meat Mixture
- 12 ounces Ground Beef
- 12 ounces Ground Pork
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon Ground Black Pepper
- 1/2 teaspoon Salt
Toppings & Condiments
- Thick-cut Bacon (quantity: 8 slices for 4 burgers)
- 8 slices Smoked Cheddar Cheese
- 1 cup Hatch Green Chile Sauce
Buns & Cooking Oil
- 4 Hamburger Buns (preferably brioche)
- Neutral Oil (for cooking patties, about 2 tablespoons)
Instructions
- Prepare the Meat Mixture: In a large bowl, combine the ground beef and ground pork with garlic powder, onion powder, ground cumin, black pepper, and salt. Mix gently until all seasonings are evenly incorporated without overworking the meat.
- Form Patties: Divide the meat mixture into 4 equal portions and shape each into a burger patty about 3/4 inch thick, ensuring they are slightly larger than the buns to account for shrinkage during cooking.
- Cook the Bacon: In a skillet over medium heat, cook the thick-cut bacon until crispy. Remove and set on paper towels to drain excess fat.
- Cook the Burgers: Heat neutral oil in a large skillet or cast iron pan over medium-high heat. Add the patties and cook for about 4-5 minutes per side for medium doneness, or until internal temperature reaches 160°F (71°C). During the last minute of cooking, place two slices of smoked cheddar cheese on each patty and cover the pan to melt the cheese thoroughly.
- Toast the Buns: While the cheese melts, lightly toast the brioche buns in the same skillet or a toaster until golden brown.
- Assemble the Burgers: Spread about 1/4 cup of Hatch green chile sauce on the bottom half of each toasted bun. Place the cheesy burger patty on top, then add two slices of crispy bacon. Cover with the top bun.
- Serve: Serve the Bacon Hatch Chile Burgers immediately with extra Hatch green chile sauce on the side if desired.
Notes
- Use freshly ground meat for the best texture and flavor.
- Adjust the Hatch green chile sauce quantity to control the spiciness.
- Let the cooked patties rest for a few minutes to retain juiciness before assembling.
- Can be made ahead by preparing patties and bacon in advance, then finishing the assembly just before serving.
