Ingredients
Scale
Main Ingredients
- 1 lb. cooked, seasoned shredded chicken
- 1 ½ cups freshly grated Colby-jack cheese
- 1 ½ cups freshly grated Pepper-Jack cheese
- 20 street taco corn tortillas
- Olive oil or olive oil cooking spray (for brushing tortillas)
Toppings
- Salsa (to taste)
- Diced tomato (to taste)
- Guacamole (to taste)
- Sour cream (to taste)
- Cilantro (to taste)
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit. Line two large baking sheets with parchment paper to prevent sticking and make cleanup easier.
- Prepare Tortillas: Lay the corn tortillas flat on the lined baking sheets. Brush both sides of each tortilla lightly with olive oil or spray with olive oil cooking spray to ensure crispiness when baked.
- Add Filling: Place about two tablespoons of the cooked, seasoned shredded chicken down the center of each tortilla, then top with two heaping tablespoons of the combined grated Colby-jack and Pepper-Jack cheese.
- Initial Bake: Bake the open-faced tacos in the oven for approximately 2 minutes, or until the cheese has melted evenly over the chicken.
- Form Tacos: Remove the trays from the oven and carefully fold each tortilla in half over the filling to create the classic taco shape. Gently press them together to maintain this shape.
- Final Bake: Return the folded tacos to the oven and bake for an additional 12 to 14 minutes, or until the corn tortillas are crispy and golden on the outside.
- Serve: Remove from the oven and serve immediately with your favorite toppings such as salsa, diced tomato, guacamole, sour cream, and fresh cilantro for added flavor and freshness.
Notes
- Be careful when folding the tortillas after the initial bake, as they can be hot and fragile.
- If you prefer spicier tacos, consider adding jalapeño slices or hot sauce as a topping.
- You can substitute chicken with beef, pork, or a plant-based protein if preferred.
- For a lower-fat version, use reduced-fat cheese or reduce the amount of cheese slightly.
- Ensure tortillas are brushed evenly with oil for consistent crispiness on baking.
