Ingredients
Scale
Meat Filling
- 1/2 pound lean ground beef (ground sirloin recommended)
- 1/2 cup salsa
- Salt, to taste
- Pepper, to taste
Assembly
- 1 (12-ounce) can refrigerated Pillsbury Grands! crescent rolls (8 count)
- 1 (8-ounce) package Mexican blend shredded cheese (about 2 cups)
- 1 (15-ounce) can red enchilada sauce (preferably Hatch brand)
Toppings (optional)
- Sour cream
- Diced tomato
- Diced avocado
- Salsa
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- Cook Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain off any excess grease to keep the dish lean. Stir in salsa and reduce heat to low; cook for about 5 minutes until heated through. Season with salt and pepper to taste. Remove from heat and allow the mixture to cool slightly.
- Assemble Crescent Roll-Ups: Unroll the crescent rolls and place approximately 2 tablespoons of the meat mixture on the wide end of each crescent triangle. Sprinkle a generous pinch of shredded Mexican cheese over the meat. Roll each crescent up tightly and place seam-side down in the prepared baking dish. Don’t worry if some filling falls out — you can sprinkle that over the top later.
- Add Sauce and Cheese: Pour the entire can of red enchilada sauce evenly over the arranged crescent rolls. Sprinkle the remaining cheese evenly on top. If you have leftover meat mixture or filling that fell out during rolling, sprinkle it over the crescents now for extra flavor.
- Bake: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the crescent rolls are golden brown and cooked through.
- Serve: Remove from oven and let cool slightly before serving. Top with your favorite toppings such as sour cream, diced tomato, diced avocado, or additional salsa for a delicious finishing touch.
Notes
- Use lean ground beef or ground sirloin to reduce grease.
- You can substitute the red enchilada sauce with green if preferred for a different flavor profile.
- For a spicier kick, add diced jalapeños to the beef mixture.
- Crescent rolls can be substituted with biscuit dough or puff pastry for different textures.
- This dish can be prepared ahead of time and refrigerated before baking; just increase baking time by a few minutes if baking cold.
