Description

These Beef Enchilada Crescent Roll-Ups combine the flavors of classic enchiladas with the convenience of crescent rolls. Ground beef is seasoned with salsa and baked inside flaky crescent dough, then smothered with enchilada sauce and melted cheese for a crowd-pleasing, easy-to-make dinner that comes together in under an hour.

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking and set aside.
  2. Cook the Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease to keep it lean. Stir in the salsa and cook on low heat for about 5 minutes until heated through. Season with salt and pepper to taste. Remove from heat and allow the mixture to cool slightly for easier handling.
  3. Assemble the Crescent Roll-Ups: Unroll the crescent dough and place approximately 2 tablespoons of the beef mixture on the wide end of each crescent triangle. Sprinkle a generous pinch of shredded cheese over the meat. Carefully roll up each crescent, even if some filling spills out, and place them seam-side down in the prepared baking dish.
  4. Add Sauce and Cheese: Pour the red enchilada sauce evenly over the assembled crescents. Sprinkle the remaining shredded cheese on top. If you have any leftover beef filling or any spilled during rolling, sprinkle it over the top as well for extra flavor.
  5. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the crescents are golden brown and the cheese is melted and bubbly. Allow them to cool slightly before serving.
