- Soaked chilies (such as guajillo or ancho)
- 2 cloves garlic
- 1 teaspoon cumin seeds
- 1 teaspoon dried oregano
- 1 tablespoon vinegar
- Water or beef broth as needed (about 4 cups)
Instructions
- Season and Sear Beef: Season the chuck roast with salt and pepper. Heat oil in a pot over medium-high heat and sear the beef on all sides until nicely browned to develop flavor.
- Prepare Birria Consomรฉ: Blend soaked chilies, garlic, cumin seeds, oregano, and vinegar until smooth. Add this sauce to the pot along with water or beef broth. Cover and simmer gently for about 3 hours or until the beef is tender and easily shredded.
- Shred the Beef: Remove the cooked beef from the pot and shred it finely. Return the shredded beef to the pot with some of the remaining broth to keep it juicy.
- Assemble Sandwiches: Take slices of sourdough or Texas toast and layer shredded beef and cheddar cheese between two slices to make sandwiches. Butter the outside of each sandwich generously.
- Grill Sandwiches: Heat a skillet or griddle over medium heat and grill the sandwiches until the bread is golden brown and crispy and the cheese is melted, flipping once.
