Instructions

  1. Season and Sear Beef: Season the chuck roast with salt and pepper. Heat oil in a pot over medium-high heat and sear the beef on all sides until nicely browned to develop flavor.
  2. Prepare Birria Consomรฉ: Blend soaked chilies, garlic, cumin seeds, oregano, and vinegar until smooth. Add this sauce to the pot along with water or beef broth. Cover and simmer gently for about 3 hours or until the beef is tender and easily shredded.
  3. Shred the Beef: Remove the cooked beef from the pot and shred it finely. Return the shredded beef to the pot with some of the remaining broth to keep it juicy.
  4. Assemble Sandwiches: Take slices of sourdough or Texas toast and layer shredded beef and cheddar cheese between two slices to make sandwiches. Butter the outside of each sandwich generously.
