Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a large baking sheet or pizza tray with parchment paper or grease foil for easy cleanup and to prevent sticking.
- Sauté Vegetables: Heat 2 tablespoons of olive oil in a large frying pan or skillet over medium heat. Add the thinly sliced onion and the bell peppers. Sauté for 5-6 minutes until they soften and turn golden brown, stirring regularly. Remove from heat and set aside to cool.
- Prepare Chicken Filling: In a large bowl, combine 8 ounces of room temperature cream cheese, ¼ cup sour cream, 1 tablespoon lime juice, ¼ cup shredded mozzarella, ¼ cup shredded cheddar, and 1 ½ tablespoons taco seasoning. Mix until smooth and evenly blended.
- Combine Chicken and Veggies: Add the shredded cooked chicken and the cooled sautéed onions and bell peppers to the cheese mixture. Gently stir to incorporate everything evenly. Set this filling aside.
- Prepare Tortillas: Slice each of the 12 medium flour tortillas in half, creating 24 semicircles.
- Fill Tortilla Cones: Distribute the chicken filling evenly among the sliced tortillas—about 1.5 to 2 tablespoons per half tortilla. Spread the filling leaving a small border along the edges.
- Roll Tortillas: Carefully roll each filled tortilla half into a cone shape, being firm enough to hold but not so tight that filling spills out.
- Arrange Base Layer: Place a small round bowl in the center of the prepared baking tray. Arrange half of the tortilla cones around this bowl with the pointed ends touching it to form the base ring layer.
- Add Cheese Topping: Sprinkle half of the remaining ¼ cup shredded cheddar and ¼ cup shredded mozzarella over the base layer of cones.
- Build Top Layer: Arrange the remaining cones on top of the base layer to form a second ring. Top this second layer with the remaining cheddar and mozzarella cheeses. Remove the central bowl carefully.
- Prepare for Baking: Lightly spray the edges of the tortillas with cooking spray or brush with a bit of oil to help them crisp up.
- Bake: Place the quesadilla ring on the middle rack of the preheated oven. Bake for approximately 15-20 minutes or until the cheese is melted and the tortilla edges become crispy and golden brown.
