French Bread and Cheese

  • 1 loaf of French Bread (cut in half lengthwise)
  • 1 1/2 cups fontina cheese (freshly grated)
  • 1 cup mozzarella cheese (freshly grated)

Chicken and Sauce

  • 2 small chicken breasts (cut into 1 inch pieces)
  • 1 Tablespoon olive oil
  • Salt and pepper (to taste)
  • 2 cloves garlic (minced)
  • 2/3 cup buffalo wing sauce
  • 1/4 cup ranch dressing

Garnish

  • 4 green onions (thinly sliced)
  • 1 bunch cilantro (chopped)


Instructions

  1. Toast the Bread: Place the French bread halves cut side up onto a large cookie sheet. Broil in the oven for 2 minutes, then rotate and broil for another 2 minutes or until the tops are lightly golden. Remove from the oven and allow to cool slightly.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and add olive oil. Season the chicken pieces with salt and pepper, then add to the skillet. Cook for 10 to 12 minutes until no longer pink in the center. Add minced garlic and stir for an additional minute. Pour in buffalo wing sauce, stir to coat the chicken well. Reduce heat to low and simmer for 5 minutes. Turn off the heat and remove from burner.
  3. Assemble the Pizza: Brush 2 to 3 tablespoons of ranch dressing evenly over each piece of French bread, then drizzle 2 to 3 tablespoons of buffalo wing sauce on top. Sprinkle fontina cheese evenly over the bread, then spoon the sauced chicken over the cheese. Finish by covering the chicken with mozzarella cheese.
  4. Broil to Finish: Place the assembled bread back in the oven and broil on high for about 5 minutes, watching closely to avoid burning. Broil until the cheese is melted and bubbly. Remove from the oven, drizzle with extra buffalo wing sauce, and sprinkle with sliced green onions and chopped cilantro. Cut into slices and serve immediately.
