Description

Butter Swim Biscuits are soft, buttery, and perfectly golden biscuits baked in melted butter. The unique method of pouring melted butter into the baking dish before adding the biscuit dough allows the biscuits to ‘swim’ in butter, resulting in a rich, tender texture and a deliciously crispy bottom. These biscuits are easy to make and perfect for breakfast or as a side for any meal.

Ingredients

Scale

Dry Ingredients

  • 2½ cups all-purpose flour (300 grams)
  • 1½ tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1½ teaspoons salt

Wet Ingredients

  • 1¾ cups buttermilk
  • ½ cup unsalted butter, melted (1 stick)

Instructions

  1. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit to ensure it is hot enough for perfectly baked biscuits.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Add Buttermilk: Pour in the buttermilk and gently mix with the dry ingredients until just incorporated. Be careful not to overmix to keep the biscuits tender.
  4. Prepare Buttered Dish: Pour the melted butter into the bottom of an 8×8-inch glass baking dish, spreading it evenly.
  5. Transfer Dough: Turn the biscuit dough into the butter-lined baking dish and spread it evenly to form a flat layer over the butter.
  6. Score Dough: Using a bench scraper or sharp knife, cut the dough into nine equal squares to create individual biscuits.
  7. Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the biscuits are golden brown and spring back when gently pressed.
  8. Rest and Serve: Remove from the oven and let the biscuits sit for 5 minutes so they can absorb the melted butter. Serve warm for best flavor and texture.

Notes

  • Do not overmix the dough to prevent tough biscuits.
  • Using chilled buttermilk straight from the fridge helps keep the dough tender.
  • For extra crispiness, you can broil the biscuits for 1-2 minutes at the end, watching closely to avoid burning.
  • If you don’t have buttermilk, you can substitute with milk mixed with a tablespoon of lemon juice or vinegar.
  • Ensure the baking dish is glass or oven-safe to avoid cracking at high temperatures.
