- Melt the Caramel: In a small heavy-bottomed nonstick pot, combine the unwrapped caramels with 1 tablespoon of heavy cream. Melt over low heat, stirring until smooth and creamy. Keep warm and smooth while preparing the fudge base, reheating gently if necessary.
- Create the Apple Cider Fudge Base: In a separate medium heavy-bottomed nonstick pot, whisk together the apple cider drink mix, salt, butter, and 2 tablespoons heavy cream over low heat until the butter melts and the apple cider mix dissolves completely. Pour in the sweetened condensed milk and mix well.
- Add White Chocolate: Fold in the white chocolate chips using a heat-resistant spatula, stirring continuously over low heat, scraping the sides and bottom of the pot to ensure a smooth, even mixture. Maintain low heat to prevent separation.
