Description

This creamy Caramel Apple Fudge combines smooth white chocolate, rich caramel, and a hint of apple cider for a decadent treat. Easy to prepare on the stovetop, it features luscious swirls of caramel and apple cider-infused fudge that set beautifully for a perfect sweet indulgence, ideal for fall or holiday gatherings.

Ingredients

Scale

Caramel Mixture

  • 25 soft caramels (unwrapped)
  • 1 tablespoon heavy cream

Fudge Base

  • 3 tablespoons heavy cream (divided; 2 tablespoons for fudge base)
  • 2 tablespoons unsalted butter
  • 3 packets apple cider drink mix
  • 3 cups white chocolate chips
  • 1 (14-ounce) can sweetened condensed milk (full fat)
  • 1/16 teaspoon salt

Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper or foil, leaving an overhang for easy removal. Lightly grease the pan before laying down the parchment, and secure it with binder clips or a similar tool to keep it in place.
  2. Melt the Caramel: In a small heavy-bottomed nonstick pot, combine the unwrapped caramels with 1 tablespoon of heavy cream. Melt over low heat, stirring until smooth and creamy. Keep warm and smooth while preparing the fudge base, reheating gently if necessary.
  3. Create the Apple Cider Fudge Base: In a separate medium heavy-bottomed nonstick pot, whisk together the apple cider drink mix, salt, butter, and 2 tablespoons heavy cream over low heat until the butter melts and the apple cider mix dissolves completely. Pour in the sweetened condensed milk and mix well.
  4. Add White Chocolate: Fold in the white chocolate chips using a heat-resistant spatula, stirring continuously over low heat, scraping the sides and bottom of the pot to ensure a smooth, even mixture. Maintain low heat to prevent separation.
  5. Combine and Swirl: Once both mixtures are smooth and warm, pour the fudge base into the prepared pan and spread evenly with a spatula. Immediately pour the melted caramel over the fudge and use a table knife to swirl the two mixtures together thoroughly, creating marbled patterns.
  6. Chill and Set: Cover the pan and refrigerate for 4 to 6 hours, or until the fudge is fully set and firm.
  7. Serve: Remove the fudge from the pan using the parchment overhangs. Use a sharp knife warmed with hot water and dried to slice the fudge into smaller pieces recommended due to its rich and intense flavor.

Notes

  • Use soft caramels for easier melting and smooth texture.
  • If caramel mixture thickens too much, gently reheat on low to maintain swirl consistency.
  • The apple cider drink mix adds a unique tangy sweetness that complements the caramel flavor perfectly.
  • Heating the knife before slicing ensures clean cuts without cracking the fudge.
  • Store fudge refrigerated to maintain freshness and texture.
