These Chocolate Berry Bars are a refreshing and wholesome no-bake treat combining fresh strawberries, blueberries, raspberries, toasted almonds, coconut flakes, chia seeds, and smooth dark chocolate. Perfect for a healthy snack or dessert, they are easy to prepare with only simple layering and freezing required, resulting in a deliciously fruity and chocolaty bar packed with antioxidants and nutrients.

Ingredients

Scale

Fruit

  • 1 cup fresh strawberries, chopped into small pieces
  • ¾ cup fresh blueberries
  • ¾ cup fresh raspberries

Chocolate Topping

  • ¾ cup dark chocolate chips
  • ¼ cup coconut oil

Toppings

  • 2 tablespoons coconut flakes
  • ¼ cup slivered almonds
  • 1 tablespoon chia seeds

Instructions

  1. Melt Chocolate: In a medium microwave-safe bowl, add the dark chocolate chips and coconut oil.
  2. Microwave Chocolate: Melt in the microwave in 1-minute increments, stirring between each, until the mixture is melted and smooth.
  3. Set Chocolate Aside: Once melted and smooth, set the chocolate mixture aside to cool slightly.
  4. Toast Almonds and Coconut: Preheat a large skillet over medium heat. Add the slivered almonds and coconut flakes.
  5. Toast Until Golden: Toast the almonds and coconut flakes, stirring frequently, until golden brown and fragrant.
  6. Set Toasted Mix Aside: Remove from heat and set aside to cool.
  7. Prepare Loaf Pan: Line a 9×5 inch loaf pan with parchment paper, ensuring the parchment extends up the sides for easy removal later.
  8. Layer Berries: Add chopped strawberries, blueberries, and raspberries to the loaf pan in layers, distributing them evenly.
  9. Add Toppings: Sprinkle the toasted almonds, coconut flakes, and chia seeds evenly over the layered berries.
  10. Drizzle Chocolate: Pour and drizzle the melted chocolate evenly over the berry and topping mixture in the loaf pan to cover.
  11. Settle the Mixture: Tap the loaf pan on the counter a few times to help the layers settle and compact slightly.
  12. Freeze Bars: Place the loaf pan in the freezer for 7 hours, or until the bars are fully set and firm.
  13. Remove from Freezer: Take the loaf pan out of the freezer when ready to serve.
  14. Unmold Bars: Using the parchment paper flaps, lift the frozen block out of the pan and transfer onto a cutting board.
  15. Thaw Briefly: Let the frozen block thaw at room temperature for 2-3 minutes to soften slightly for easier slicing.
  16. Slice Bars: Using a serrated knife, cut the block into 8 equal bars.
  17. Serve: Enjoy these refreshing, fruity, and chocolaty berry bars immediately or keep refrigerated or frozen for later.

Notes

  • Ensure the chocolate is smoothly melted to easily drizzle over berries.
  • Toast almonds and coconut carefully to avoid burning and to bring out flavors.
  • Use fresh berries for best texture; frozen berries may release excess moisture.
  • The bars need to freeze completely to hold shape well when sliced.
  • Letting the bars thaw slightly before slicing helps achieve clean cuts.
  • Store bars in an airtight container in the freezer or refrigerator to maintain freshness.
  • Experiment with adding other nuts or seeds for different textures.
