Description

Classic Beef Tacos with All Toppings features seasoned ground beef cooked to perfection and loaded into soft tortillas, then topped with a colorful array of fresh vegetables, cheese, sour cream, salsa, and avocado for a crowd-pleasing Mexican meal that’s perfect for taco night or any casual gathering.

Ingredients

Scale

Beef Taco Filling

  • 1 pound ground beef 85 percent lean
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1/2 cup water

Taco Assembly & Toppings

  • 12 small corn or flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1 lime, cut into wedges

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the finely diced onion and cook for 3 to 4 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Cook the Ground Beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Once fully browned, drain any excess fat from the pan if necessary to avoid greasiness.
  3. Season the Meat: Stir in the tomato paste and taco seasoning, mixing thoroughly to coat the beef evenly. Pour in the water and bring the mixture to a simmer. Let it cook for 5 to 7 minutes until the sauce thickens and coats the beef well.
  4. Warm the Tortillas: Heat the tortillas in a dry skillet over medium heat or wrap them in a damp paper towel and microwave until they become soft and pliable, preparing them for filling.
  5. Assemble the Tacos: Spoon the seasoned beef mixture evenly into each tortilla. Top with shredded cheddar cheese, shredded lettuce, diced tomatoes, sour cream, salsa, sliced black olives, chopped cilantro, diced avocado, and finish with a squeeze of fresh lime juice.
  6. Serve Immediately: Serve the tacos right away while warm and fresh, allowing everyone to enjoy the crunchy, creamy, fresh, and savory flavors that blend perfectly in each bite.

Notes

  • For crispy tacos, use hard taco shells and bake them at 375°F for 5 minutes after filling.
  • You can substitute ground turkey or chicken for the beef for a lighter protein option.
  • Set up a taco bar with various toppings to let everyone customize their tacos to their liking.
