Instructions

  1. Sautรฉ vegetables: In a large pot over medium heat, heat the olive oil. Add diced onion, sliced carrots, and celery stalks. Cook for 5โ€“7 minutes until the vegetables are softened and fragrant. Then add the minced garlic and cook for another 30 seconds to bring out its flavor.
  2. Add broth & chicken: Pour in the chicken broth. Add the boneless chicken breasts or thighs along with dried thyme, dried parsley, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook gently for 20โ€“25 minutes until the chicken is fully cooked and tender.
  3. Shred chicken: Remove the cooked chicken from the pot and shred it using two forks. Return the shredded chicken back into the soup pot and stir to combine.
  4. Add noodles (optional): If using egg noodles, add them to the soup now. Cook according to the package instructions, usually about 6โ€“8 minutes, until the noodles are tender but not mushy.
