Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt to combine the dry ingredients evenly.
- Combine Wet Ingredients: In another bowl, blend the milk, egg, brewed coffee, and melted butter until the mixture is smooth and well incorporated.
- Combine Wet and Dry Mixtures: Gradually pour the wet mixture into the dry ingredients, gently stirring until just combined. It is fine if the batter remains lumpy; do not overmix to keep pancakes fluffy.
- Preheat Griddle: Warm a griddle or large skillet over medium heat. Lightly grease it with butter or cooking spray to prevent sticking.
- Cook Pancakes – First Side: Pour batter onto the preheated griddle in your desired pancake sizes. Cook each pancake until bubbles appear on the surface and the edges begin to set, approximately 2-3 minutes.
- Flip and Cook – Second Side: Carefully flip the pancakes and cook for an additional 1-2 minutes until they are golden brown and cooked through.
