Ingredients
Scale
Ground Beef and Spices
- 1 lb lean ground beef
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1/4 cup water or beef broth
Roasted Sweet Potatoes
- 3 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- Pinch of black pepper
Creamy Sauce
- 1 cup cottage cheese (2% or 4% milkfat)
- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 2 teaspoons hot sauce or sriracha (optional)
Additional Toppings and Greens
- 2 cups baby spinach or mixed greens
- 1 small red onion, thinly sliced
- 2 tablespoons chopped fresh parsley or green onions
Instructions
- Preheat and Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Add the cubed sweet potatoes to the baking sheet and drizzle with olive oil, 1/2 teaspoon salt, and a pinch of black pepper. Toss to coat and spread into an even layer.
- Roast Sweet Potatoes: Roast the sweet potatoes for 20–25 minutes, flipping once halfway through, until they are tender inside and caramelized around the edges.
- Cook Ground Beef: While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink.
- Season Beef: Drain excess grease if needed. Return skillet to the heat and sprinkle the beef with smoked paprika, garlic powder, onion powder, cumin, chili powder, the remaining 1/2 teaspoon salt, and black pepper. Stir well to coat evenly.
- Simmer with Liquid: Add water or beef broth to the skillet, scraping up any browned bits from the bottom. Let the liquid simmer for 1–2 minutes until slightly reduced, making the beef juicy and flavorful.
- Make Cottage Cheese Sauce: In a small bowl, combine cottage cheese, Greek yogurt, lemon juice, and hot sauce if using. Stir until smooth and creamy. Adjust seasoning with additional salt or lemon juice if desired.
- Prepare Fresh Ingredients: Thinly slice the red onion and chop fresh parsley or green onions while the beef finishes cooking.
- Assemble Bowls: Place a handful of baby spinach or mixed greens in each serving bowl. Divide the roasted sweet potatoes evenly among the bowls over the greens.
- Add Ground Beef: Spoon a generous portion of the seasoned ground beef over the sweet potatoes in each bowl.
- Top with Sauce and Garnishes: Add dollops of the cottage cheese sauce over the warm ingredients or drizzle it as desired. Finish each bowl with sliced red onion and a sprinkle of fresh parsley or green onions.
- Serve: Serve immediately, mixing everything together just before eating to let the creamy cottage cheese coat the beef, sweet potatoes, and greens.
Notes
- Use lean ground beef to reduce excess grease and keep the dish healthier.
- If you prefer a spicier bowl, add extra hot sauce or chili powder to taste.
- For a dairy-free option, omit the cottage cheese and Greek yogurt and substitute with a vegan creamy dressing.
- You can prepare the sweet potatoes ahead of time and reheat before assembling.
- Mixing the bowl just before eating keeps the greens fresh and prevents sogginess.
