- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp kosher salt plus more to taste
- 1/4 tsp black pepper
- 1/4 cup low sodium beef broth or water
Roasted Sweet Potatoes
- 2 medium sweet potatoes peeled and cut into 1/2 inch cubes
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp kosher salt plus more to taste
- 1/4 tsp black pepper
Toppings
- 1 1/2 cups cottage cheese
- 1 large avocado sliced
- 1 to 2 fresh jalapeños thinly sliced
- 2 green onions thinly sliced
- 1 lime cut into wedges (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Season Sweet Potatoes: In a large bowl, toss the peeled and cubed sweet potatoes with olive oil, smoked paprika, ground cumin, chili powder, garlic powder, onion powder, kosher salt, and black pepper until all cubes are evenly coated with the spices and oil.
- Roast Sweet Potatoes: Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet. Roast in the preheated oven for 20 to 25 minutes, tossing once halfway through, until they are tender in the center and caramelized on the edges. Set aside when done.
- Cook Ground Beef: While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and break it up with a spatula, cooking until browned and no longer pink in the middle.
- Season Beef: Drain excess fat if necessary. Season the cooked ground beef with smoked paprika, ground cumin, chili powder, garlic powder, onion powder, kosher salt, and black pepper. Stir well to ensure the beef is evenly coated with the spices.
- Simmer with Broth: Pour in the low sodium beef broth or water, then reduce heat to medium-low. Simmer the mixture for 2 to 3 minutes until the liquid slightly reduces, and the beef becomes glossy and saucy but not soupy. Remove from heat.
- Prepare Toppings: Slice the avocado, jalapeños, and green onions thinly. Stir the cottage cheese well until creamy and scoopable.
- Assemble Bowls: Divide the roasted sweet potatoes evenly among four bowls. Top each bowl with a portion of the seasoned ground beef and add a generous scoop of creamy cottage cheese alongside.
- Add Fresh Toppings: Fan avocado slices over each bowl, then sprinkle jalapeño slices and green onions on top. Finish with a squeeze of lime juice if desired.
- Serve and Enjoy: Serve immediately while the beef and potatoes are warm. Alternatively, allow ingredients to cool and pack separately for convenient meal prep bowls.
