This Creamy Chicken and Spinach Casserole is a comforting and delicious dish featuring tender shredded chicken blended with creamy cheeses and fresh spinach, then baked to bubbly perfection. Ideal for a wholesome family dinner, this casserole combines rich flavors and a smooth texture that pairs wonderfully with rice, bread, or pasta.

Ingredients

Scale

Chicken and Vegetables

  • 4 chicken breasts, cooked and shredded
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Dairy and Cheese

  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Seasoning

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Sauté Garlic: In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Cook Spinach: Add the chopped spinach to the skillet and cook for 2 to 3 minutes, or until wilted. Remove the skillet from heat.
  4. Mix Cheeses and Seasoning: In a large bowl, combine the softened cream cheese, sour cream, shredded mozzarella, grated Parmesan, salt, and pepper. Mix well until smooth and fully blended.
  5. Add Chicken and Spinach: Stir the shredded cooked chicken and wilted spinach into the cheese mixture. Mix until all ingredients are evenly incorporated.
  6. Prepare Baking Dish: Grease an 8×8 or 9×9-inch baking dish and spread the chicken and cheese mixture evenly in the dish.
  7. Bake: Place the baking dish into the preheated oven and bake for 20 to 25 minutes, or until the casserole is hot and bubbly.
  8. Serve: Remove from oven and serve hot alongside rice, bread, or pasta for a complete meal.

Notes

  • You can use fresh or frozen spinach, just make sure to thaw and drain excess water if using frozen.
  • Leftover cooked chicken or rotisserie chicken works great in this recipe.
  • For extra flavor, consider adding a pinch of nutmeg to the cheese mixture.
  • This casserole is easily doubled to feed a larger group.
  • Make sure the cream cheese is softened to ensure a smooth mixture.
