Instructions

  1. Preheat the Oven: Set your oven to 400°F to ensure it reaches the ideal cooking temperature for roasting the garlic and baking the dip.
  2. Prepare Garlic for Roasting: Slice the tops off each garlic head to expose the cloves, then place them on a piece of foil ready for roasting.
  3. Roast the Garlic: Drizzle the garlic heads with olive oil, wrap them securely in foil, and roast for 35 to 40 minutes, until the cloves are soft and golden brown.
  4. Cool and Extract Garlic: Remove the roasted garlic from the oven and let it cool slightly. Then squeeze out the softened cloves into a mixing bowl.
  5. Mix the Base: Add the room temperature cream cheese, sour cream, and mayonnaise to the roasted garlic in the bowl and stir until smooth and creamy.
  6. Add Cheese and Seasonings: Stir in grated Parmesan, shredded mozzarella, chopped chives, salt, and black pepper until everything is well combined.
