Instructions

- Fill the tortillas: Lay one tortilla flat on a clean surface. Spoon 2 to 3 tablespoons of the chicken mixture onto the lower third of the tortilla, spreading it evenly.
- Roll the taquitos: Roll the tortilla tightly around the filling to enclose it fully. Repeat this process with the remaining tortillas and filling mixture.
- Heat the oil: In a large skillet, pour about 1 inch of vegetable oil and heat it over medium-high heat until hot but not smoking.
- Fry the taquitos: Carefully place a few taquitos seam-side down into the hot oil. Fry them for about 2 to 3 minutes on each side until they turn golden brown and crispy.
- Drain excess oil: Remove the fried taquitos from the skillet using tongs and place them on paper towels to drain the excess oil.
