Description

These Delicious Cottage Cheese Egg Bites are a protein-packed breakfast option that combines eggs, creamy cottage cheese, and sharp cheddar with savory bacon and fresh chives. Baked in muffin tins, they are easy to prepare, portable, and perfect for meal prep or a quick morning meal.

Ingredients

Scale

Egg Mixture

  • 8-9 large eggs
  • 1 cup cottage cheese (1% to 4% milk fat)
  • 1 cup shredded cheddar cheese (or Gruyere as a substitute)
  • 1 teaspoon salt (kosher recommended)
  • 1 teaspoon pepper

Toppings

  • 1/3 cup cooked bacon, pre-cooked (about 3-4 strips)
  • 1/4 cup chives (optional)

Other

  • 1 can cooking spray (to prevent sticking)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray a silicone muffin pan thoroughly with cooking spray to ensure the egg bites won’t stick.
  2. Blend Ingredients: In a blender or with an immersion blender, blend the eggs, cottage cheese, shredded cheddar cheese, salt, and pepper until the mixture is smooth and uniform.
  3. Pour Mixture: Pour the blended egg mixture into the muffin cups, filling each just over halfway to allow space for rising during baking.
  4. Add Toppings: Evenly sprinkle the pre-cooked bacon pieces and chopped chives over the top of each filled muffin cup if desired for added flavor.
  5. Bake: Place the muffin pan in the preheated oven and bake for 20 to 22 minutes until the egg bites are set and slightly golden on top.
  6. Cool and Serve: Remove the pan from the oven and allow the egg bites to cool slightly before carefully removing them from the pan. Serve warm or store for later use.

Notes

  • Using a silicone muffin pan or greasing the pan well will prevent sticking and make removal easier.
  • You can substitute Gruyere cheese for cheddar for a different flavor profile.
  • Bacon can be omitted or replaced with cooked sausage or veggies for a vegetarian variation.
  • Chives are optional but add a fresh, mild onion flavor that complements the eggs.
  • These egg bites store well in the refrigerator for up to 4 days or freeze for longer storage.
