Instructions

- Prepare Muffin Tin: Spray a 6-cup muffin tin thoroughly with cooking spray to prevent sticking and make removal easy.
- Mix Eggs and Cheese: In a bowl, whisk together the eggs and cottage cheese until fully combined and smooth.
- Add Seasonings and Cheese: Stir in the shredded cheddar cheese, salt, and pepper, ensuring an even distribution of flavors.
- Incorporate Bacon and Chives: Chop the pre-cooked bacon into small pieces and fold them into the mixture along with the chopped chives, mixing gently.
- Fill Muffin Tin: Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full to allow space for rising.
