Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and lightly oil a baking sheet to prevent the burritos from sticking during baking.
- Cook Tater Tots: Bake the frozen tater tots according to the package instructions until they are crispy and golden brown, about 20 minutes. Remove them from the oven and set aside to cool.
- Brown the Sausage: Heat olive oil in a skillet over medium-high heat. Add the breakfast sausage, breaking it apart, and cook until fully browned and cooked through, about 3-5 minutes.
- Cook the Eggs: In a bowl, whisk the eggs. Pour the eggs into the skillet with the browned sausage. Cook, stirring occasionally, until the eggs are just set but still moist. Then stir in the half and half to thicken the mixture. Season generously with kosher salt and freshly ground black pepper.
- Assemble the Burritos: Lay each tortilla flat and spread a layer of refried beans down the center. On top, layer cooled tater tots, the sausage and egg mixture, shredded cheddar and Monterey Jack cheeses, chopped tomatoes, and fresh cilantro.
- Fold Burritos: Fold each tortilla burrito-style by tucking in the sides and rolling tightly. Place each burrito seam-side down on the prepared baking sheet.
