For the Lamb Filling

  • 1 lb ground lamb

  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup fresh parsley, chopped

Instructions

  1. Prepare the Lamb Filling. Heat olive oil in a skillet over medium heat. Add finely chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another 1 minute until fragrant.
  2. Cook the Ground Lamb. Add the ground lamb to the skillet, breaking it apart with a spatula. Cook until browned, about 7-8 minutes. Stir in cumin, coriander, paprika, salt, and pepper, then cook for an additional 2 minutes to blend the flavors. Remove from heat.
  3. Make the Garlic Yogurt Sauce. In a small bowl, combine Greek yogurt, minced garlic, lemon juice, and a pinch of salt. Stir well and refrigerate until ready to use.
  4. Prepare the Vegetables. Chop cucumber, tomatoes, red onion, and parsley. Set aside to assemble the pitas.
  5. Warm the Pitas. Lightly warm the pita breads in a dry skillet or oven at 350°F (175°C) for about 2-3 minutes until soft and pliable.
