Description
A quick and flavorful Doritos Taco Salad combining seasoned ground beef, fresh vegetables, black beans, cheddar cheese, and crunchy nacho cheese Doritos, tossed with Catalina or ranch dressing for a deliciously satisfying meal in just 20 minutes.
Ingredients
Scale
Meat and Seasoning
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
Vegetables and Beans
- 3 to 4 Romaine lettuce hearts, rinsed then chopped
- 1 cup black beans, rinsed
- 1 large tomato, chopped OR sliced cherry tomatoes
Dairy and Chips
- 1/2 cup shredded cheddar cheese
- 1 ยฝ cups nacho cheese Doritos, broken into bite-size pieces
Dressing and Garnish
- 1 cup Catalina dressing OR your favorite salad dressing (ranch dressing also recommended)
- Fresh cilantro (optional)
Instructions
- Brown the Beef: In a large skillet over medium-high heat, brown and crumble the ground beef. Drain off excess grease. Add the taco seasoning along with the amount of water specified on the seasoning packet. Stir until the mixture comes to a boil, then reduce the heat to low and simmer for 10 minutes. Remove from heat and allow the beef to cool slightly.
- Assemble the Salad: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled seasoned ground beef and gently toss all ingredients together to combine evenly. You may serve immediately or chill in the refrigerator until ready to eat. Avoid adding the chips until just before serving to maintain their crunch.
- Add Chips and Dressing: When ready to serve, add the broken nacho cheese Doritos to the salad along with your chosen dressing (Catalina or ranch). Toss the salad well to coat all ingredients with the dressing. Optionally, garnish with fresh cilantro for an added burst of flavor. Serve immediately and enjoy!
Notes
- Do not add Doritos chips until you are ready to serve to keep them crunchy.
- You can substitute Catalina dressing with ranch or your favorite salad dressing depending on preference.
- Fresh cilantro is optional but adds a nice herbal touch.
- Use lean ground beef to reduce grease and fat content.
- Black beans add protein and fiber for a more balanced salad.
