  • 0.54 cups coconut milk (full fat) or substitute with evaporated milk, heavy cream, or evaporated coconut milk
  • 4 tbsp evaporated milk or coconut milk for a vegan version


Instructions

  1. Ripe Mango Puree: Transfer the peeled, pitted, and diced mango chunks into a blender or food processor. Blend until you achieve a smooth puree. For an even silkier texture, strain the puree to remove any fibrous bits.
  2. Gelatin Mixture: In a small bowl, mix the cold water with gelatin powder to allow it to bloom and thicken. Next, add the sugar, coconut milk (or your preferred milk substitute), and the mango puree. Whisk all the ingredients thoroughly until the mixture is completely smooth and uniform.
  3. Combine Ingredients: Pour the mixture into a pot and gently heat it over low to medium heat. Stir continuously until the gelatin is fully dissolved. Be careful not to let the mixture boil to preserve the texture and flavor. Once dissolved, remove from heat.
  4. Chill: Pour the mixture into serving bowls or molds of your choice. Refrigerate for at least 6 hours or overnight to allow the pudding to set firmly.
  5. Serve: Once set, serve the mango pudding chilled, optionally garnished with a drizzle of evaporated milk or coconut milk to enhance creaminess and flavor.
