- 200 ml oat milk
- 360 ml evaporated oat milk
- 200 g condensed oat milk
- 100 ml dark rum or bourbon or Cognac (or extra oat milk for alcohol-free option)

- ยผ teaspoon sea salt
- ยฝ teaspoon ground cinnamon
- 1 vanilla pod (or 2 teaspoons vanilla bean paste)
- ยฝ teaspoon freshly grated nutmeg
Instructions
- Combine Ingredients: Add the oat milk, evaporated oat milk, condensed oat milk, almond butter, sea salt, and ground cinnamon to a saucepan. Slice the vanilla pod in half lengthwise, scrape out the seeds with the back of a knife, and add both the seeds and the pod to the saucepan along with the other ingredients.
- Heat and Simmer: Place the saucepan over medium heat and bring the mixture to a gentle simmer. Allow it to simmer for 3 minutes while constantly whisking to blend all ingredients smoothly and prevent sticking.
- Add Alcohol and Nutmeg: Remove the saucepan from the heat. Whisk in the dark rum, bourbon, or Cognac (or extra oat milk if alcohol-free) along with the freshly grated nutmeg.
- Cool and Store: Let the eggnog cool to room temperature, approximately 20 minutes. Transfer it to airtight sterilized storage jars or bottles and refrigerate immediately.
- Serve and Shake: The eggnog will naturally separate in the fridge, so shake the jar or bottle well before serving. Leave the vanilla pod inside the container to continue infusing flavor during storage.
