Description

These Egg White Bites are a healthy, high-protein breakfast option that are light and fluffy with a smooth texture, perfect for meal prepping. Packed with spinach, bell pepper, and cheese, they deliver great flavor while being low in carbs and gluten-free.

Ingredients

Scale

Egg Mixture

  • 1 1/2 cups liquid egg whites or whites from about 10 large eggs
  • 1/4 cup low-fat cottage cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon garlic powder

Vegetables and Add-ins

  • 1/4 cup finely chopped spinach
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons finely chopped green onions

Other

  • Nonstick cooking spray

Instructions

  1. Preheat Oven: Preheat the oven to 325ยฐF. Lightly grease a silicone muffin pan with nonstick cooking spray and place it on a baking sheet.
  2. Blend Ingredients: In a blender, combine the egg whites, cottage cheese, Monterey Jack cheese, salt, pepper, and garlic powder. Blend until completely smooth and slightly frothy to ensure a creamy texture.
  3. Mix Vegetables: Stir in the chopped spinach, red bell pepper, and green onions by hand to evenly distribute them throughout the egg mixture.
  4. Fill Muffin Cups: Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full to allow room for rising.
  5. Create Water Bath: Place the baking sheet with the muffin pan in the oven, then carefully pour hot water into the baking sheet around the muffin pan to create a water bath. This helps cook the bites gently and keeps them moist.
  6. Bake: Bake for 25 to 30 minutes, or until the egg white bites are set in the center and cooked through.
  7. Cool and Serve: Remove from the oven and let cool for 5 minutes before gently removing the egg bites from the silicone muffin pan. Serve warm or store in an airtight container in the refrigerator for up to 4 days.

Notes

  • For a smoother, Starbucks-style texture, do not skip blending the mixture and baking in a water bath.
  • Customize these bites by adding cooked turkey bacon, sautรฉed mushrooms, or feta cheese for extra flavor.
  • These egg white bites reheat well in the microwave for 30 to 45 seconds, making them perfect for busy mornings.
