- Mix Vegetables: Stir in the chopped spinach, red bell pepper, and green onions by hand to evenly distribute them throughout the egg mixture.
- Fill Muffin Cups: Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full to allow room for rising.
- Create Water Bath: Place the baking sheet with the muffin pan in the oven, then carefully pour hot water into the baking sheet around the muffin pan to create a water bath. This helps cook the bites gently and keeps them moist.
- Bake: Bake for 25 to 30 minutes, or until the egg white bites are set in the center and cooked through.
- Cool and Serve: Remove from the oven and let cool for 5 minutes before gently removing the egg bites from the silicone muffin pan. Serve warm or store in an airtight container in the refrigerator for up to 4 days.
