Instructions

  1. Preheat the oven and prepare muffin tin: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners and lightly spray the liners with nonstick spray to prevent sticking.
  2. Make the cream cheese mixture: In a small bowl, beat together the cream cheese, 2 tablespoons granulated sugar, and 1/4 teaspoon vanilla extract until smooth and creamy. Set aside.
  3. Combine wet ingredients for batter: In a large bowl, whisk together the pumpkin puree, vegetable oil, eggs, 3/4 cup granulated sugar, and 1/2 teaspoon vanilla extract until fully combined and smooth.
  4. Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, and salt.
  5. Combine wet and dry ingredients: Add the dry mixture into the wet mixture and stir just until combined, being careful not to overmix to keep the muffins tender.
