Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
Vegetables & Aromatics
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
Rice & Broth
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth
Seasonings & Cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1 cup shredded Gruyere or Swiss cheese
Optional Garnish
- Fresh parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the combined chicken and rice dish.
- Sear Chicken: Heat olive oil in an oven-safe skillet over medium heat. Add the chicken breasts and sear each side for 3-4 minutes until they develop a golden-brown crust. Remove the chicken from the skillet and set aside.
- Caramelize Onions: In the same skillet, add the thinly sliced onions and cook over medium heat for about 15 minutes, stirring occasionally, until they are caramelized and soft. Add the minced garlic and cook for an additional 1 minute to infuse flavor.
- Add Rice and Seasonings: Stir the uncooked long-grain white rice into the onions and garlic. Pour in the chicken broth, then add dried thyme, salt, and black pepper. Mix well to combine all the ingredients evenly.
- Assemble and Bake: Nestle the seared chicken breasts on top of the rice and onion mixture in the skillet. Cover the skillet with a lid or foil tightly and bake in the preheated oven for 25-30 minutes, until the rice is tender and the chicken is cooked through.
- Add Cheese and Finish Baking: Remove the lid or foil, sprinkle the shredded Gruyere or Swiss cheese evenly over the chicken and rice, then return the skillet to the oven for another 5 minutes, or until the cheese has melted and slightly browned.
- Garnish and Serve: Remove from oven, garnish with fresh parsley if desired, and serve the dish warm for a delicious, comforting meal.
Notes
- Use an oven-safe skillet such as cast iron or a heavy stainless-steel pan to easily transition from stovetop to oven.
- To ensure chicken is fully cooked, check for an internal temperature of 165°F (74°C).
- Gruyere cheese melts beautifully and gives a nutty flavor, but Swiss cheese is a great substitute if Gruyere is unavailable.
- For extra richness, a splash of white wine can be added when cooking the onions.
- Leftovers store well in an airtight container in the refrigerator for up to 3 days.
