Ingredients
Scale
Strawberry Blondies:
- 1/2 cup diced strawberries
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, room temperature (not melted)
- 1/2 cup firmly packed light brown sugar
- 1/2 cup granulated white sugar
- 1 large egg
- 1 teaspoon vanilla extract
Strawberry Glaze:
- 1 cup powdered sugar
- 2 tablespoons strawberry jam
- 2 tablespoons water
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly spray an 8×8-inch baking pan with nonstick cooking spray. This ensures the blondies won’t stick and develops a nice crust.
- Dry Strawberries: Place the diced strawberries between several layers of paper towels. Press firmly to absorb excess moisture, preventing soggy blondies and ensuring the batter stays thick.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside to combine evenly before adding to the wet ingredients.
- Combine Wet Ingredients: In a large bowl, stir the softened butter with both the light brown sugar and granulated sugar until smooth. Add the egg and vanilla extract, stirring until fully incorporated.
- Form Batter: Gradually add the dry ingredient mixture to the wet ingredients, stirring to combine just until blended. Gently fold in the prepared diced strawberries to distribute them evenly without breaking them down too much.
- Bake: Spread the blondie batter evenly into the prepared baking pan. Bake in the preheated oven for 28 to 33 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean. Allow to cool completely in the pan.
- Prepare Glaze: Stir together the powdered sugar, strawberry jam, and water until smooth. Spread the glaze evenly over the cooled blondies. For best results, allow the glaze to harden overnight.
- Serve and Store: Once the glaze has set, slice into 9 squares and serve. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days to maintain freshness.
Notes
- Pressing the strawberries to remove moisture is key to prevent the batter from becoming too wet and to ensure proper texture.
- The glaze hardens best when left overnight but can be enjoyed sooner if needed.
- If fresh strawberries are out of season, frozen diced strawberries can be substituted; just thaw and press to remove excess moisture.
- You can swap strawberry jam in the glaze for raspberry or other berry preserves for a different flavor twist.
- Ensure butter is softened, not melted, for proper creaming with sugars, which affects the final texture.
