- Cook the potatoes: Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the potatoes in a single layer and cook for 12 to 15 minutes, stirring occasionally, until they become golden and crispy. Season the potatoes during cooking with ยฝ teaspoon salt and ยผ teaspoon black pepper.
- Add sausage and onions: Push the cooked potatoes to one side of the skillet. Add the remaining 1 tablespoon olive oil to the empty side of the pan.
