Instructions

  1. Prepare the Salad: In a large bowl, combine the rinsed and drained chickpeas, chopped fresh spinach, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion. Mix them gently to combine.
  2. Make the Dressing: In a separate bowl, mash the ripe avocado until smooth using a fork or a whisk. Add the plain yogurt, lemon juice, salt, and pepper, then mix thoroughly until the dressing is creamy and well blended.
  3. Toss the Salad with Dressing: Pour the avocado yogurt dressing over the salad mixture. Toss gently but thoroughly to coat all the vegetables and chickpeas evenly with the dressing.
  4. Assemble the Wraps: Lay out each whole wheat tortilla and place a generous scoop of the dressed salad mixture in the center. Fold the bottom of the tortilla up over the filling, tuck in the sides, and roll tightly to form a wrap.
