Instructions
- Heat oil and sauté onion whites: In a large, flat-bottomed sauté pan or skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped whites of the green onions and sauté for 1-2 minutes until fragrant and softened.
- Cook ground turkey: Add the ground turkey to the pan, breaking it into smaller pieces with a spoon or spatula. Cook until browned and no longer pink, about 6-8 minutes. In the last minute of cooking, add the minced garlic and grated ginger, stirring well to combine and release their aroma.
- Add vegetables and soy sauce: Stir in the cole slaw mix and shredded carrots. Pour in the ¼ cup plus 1 tablespoon of low-sodium soy sauce and toss everything together. Cook for 4-6 minutes, stirring frequently, until the cabbage and carrots are tender but still have a slight crunch.
- Incorporate sauces and herbs: Lower the heat to low. Add the sriracha, sweet chili sauce, toasted sesame oil, the chopped green onion tops, and chopped cilantro.
