Description

Healthy Cosmic Brownie Protein Bites are a delicious and nutritious twist on classic brownies, packed with protein, healthy fats, and rich chocolate flavor. Perfect for a post-workout snack, healthy dessert, or quick energy boost, these no-bake bites combine oats, protein powder, nut butter, and cacao for a satisfying treat with a fun cosmic look thanks to rainbow sprinkles.

Ingredients

Scale

Dry Ingredients

  • 1 cup rolled oats (or oat flour)
  • 1/2 cup chocolate protein powder (or plant-based protein powder)
  • 2 tablespoons cacao powder (unsweetened)
  • 1/4 teaspoon salt
  • 1 tablespoon chia seeds (optional)

Wet Ingredients

  • 1/4 cup peanut butter or almond butter (or any nut butter of choice)
  • 2 tablespoons honey or maple syrup
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon vanilla extract

Add-ins

  • 1/4 cup mini chocolate chips (dark chocolate or sugar-free for healthier option)
  • 1 tablespoon rainbow sprinkles (optional, for cosmic effect)

Instructions

  1. Combine dry ingredients: In a large mixing bowl, combine rolled oats, chocolate protein powder, cacao powder, salt, and chia seeds if using. Mix well to evenly distribute all dry components.
  2. Add wet ingredients: Add the nut butter, honey or maple syrup, almond milk, and vanilla extract to the dry ingredients. Stir thoroughly until a dough begins to form. If the mixture is too dry and crumbly, add almond milk one tablespoon at a time until the dough holds together well enough to shape into balls.
  3. Fold in chocolate chips: Gently stir in the mini chocolate chips and optional rainbow sprinkles. This adds texture, chocolate bursts, and the colorful cosmic effect.
  4. Shape the bites: Roll the dough into small balls about 1 inch in diameter. You should be able to make approximately 12-15 bites depending on size.
  5. Chill: Place the formed bites on a baking sheet lined with parchment paper, and refrigerate for at least 30 minutes. This chilling step firms them up and helps them hold their shape.
  6. Serve: Enjoy the protein bites immediately after chilling, or store in an airtight container in the refrigerator for up to 1 week, perfect for grab-and-go snacking.

Notes

  • Increase protein punch by adding more protein powder but maintain balance between dry and wet ingredients to ensure proper texture.
  • Experiment with mix-ins such as shredded coconut, chopped nuts, or dried fruit for variety and added nutrition.
  • Use sugar-free or dark chocolate chips for a lower sugar version.
  • Nut butter options can be swapped according to dietary needs or taste preferences such as sunflower seed butter for nut allergies.
