Ingredients

Scale

Dip Ingredients

  • 1 can artichoke hearts (14 oz)
  • 1 cup frozen spinach (or kale) (60g), can be omitted
  • 2/3 cup Parmesan cheese (or nutritional yeast) (60g)
  • 1/2 cup Greek yogurt (or dairy free alternative) (120g)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Instructions

  1. Preheat Oven: If you plan to bake the dip, preheat your oven to 350ยฐ Fahrenheit (177ยฐ Celsius).
  2. Prepare Ingredients: Drain the artichoke hearts thoroughly but do not rinse. Squeeze out excess moisture from the frozen spinach and roughly chop both the artichokes and spinach.
  3. Combine Ingredients: Place the chopped artichokes, spinach, Parmesan cheese, Greek yogurt, salt, and garlic powder into a heat-safe bowl. Stir everything together until well combined.
  4. Serve Cold or Bake: You can enjoy the dip immediately as a cold dish, or bake it on the center rack of the oven for 20 minutes until itโ€™s hot, bubbly, and lightly browned on top. Alternatively, microwave for 5 minutes, stirring halfway through, until evenly heated.
  5. Serve: Serve the dip hot from the oven alongside toasted baguette slices, tortilla chips, or an assortment of raw vegetables for dipping.
  6. Storage: Refrigerate any leftovers in an airtight container for up to five days to maintain freshness.

Notes

  • For a dairy-free version, substitute Parmesan cheese with nutritional yeast and Greek yogurt with a plant-based alternative.
  • If you prefer a smoother texture, you can pulse the ingredients briefly in a food processor before serving.
  • Adjust salt and garlic powder to taste depending on your preference.
  • The dip can be enjoyed both hot and cold, making it versatile for any occasion.
  • Make sure to squeeze out as much moisture as possible from the spinach to prevent the dip from becoming watery.
