Description

These Hot Honey BBQ Chicken Quesadillas combine tender, juicy chicken coated in a sweet and spicy barbecue sauce with melted cheddar cheese and red onions, all toasted to perfection in warm flour tortillas. A quick and flavorful twist on classic quesadillas perfect for a satisfying meal or snack.

Chicken & Sauce

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup barbecue sauce
  • 2 tablespoons honey
  • 1 teaspoon hot sauce

Quesadilla Assembly

  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup thinly sliced red onion
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon chopped fresh cilantro (for garnish)


Instructions

  1. Season the Chicken: Season both sides of the chicken breasts generously with salt and pepper to enhance flavor.
  2. Sauté Garlic: Heat olive oil in a skillet over medium heat and add the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn.
  3. Cook Chicken: Add the chicken breasts to the skillet and cook for 5 to 7 minutes on each side, or until fully cooked through with no pink inside. Remove from heat and let rest.
  4. Make Sauce: In the same skillet, combine the barbecue sauce, honey, and hot sauce over low heat. Stir and warm until heated through.
  5. Coat Chicken: Shred the rested chicken using two forks and stir it into the warmed sauce until evenly coated.
  6. Prepare Skillet: Wipe out the skillet to remove excess sauce and return to medium heat for cooking quesadillas.
  7. Assemble Quesadilla: Place one tortilla in the skillet, sprinkle half the shredded cheddar cheese evenly over the surface, then add half of the sauced chicken and a few slices of red onion. Top with remaining cheese and cover with the second tortilla.
  8. Cook Quesadilla: Cook for 2 to 3 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip and cook the other side for another 2 minutes until golden and cheese fully melted.
  9. Serve: Transfer the quesadilla to a cutting board, slice into wedges, and garnish with chopped fresh cilantro before serving warm.
