Chicken & Sauce
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 cup barbecue sauce
- 2 tablespoons honey
- 1 teaspoon hot sauce
Quesadilla Assembly
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup thinly sliced red onion
- Salt, to taste
- Pepper, to taste
- 1 tablespoon chopped fresh cilantro (for garnish)
Instructions
- Season the Chicken: Season both sides of the chicken breasts generously with salt and pepper to enhance flavor.
- Sauté Garlic: Heat olive oil in a skillet over medium heat and add the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn.
- Cook Chicken: Add the chicken breasts to the skillet and cook for 5 to 7 minutes on each side, or until fully cooked through with no pink inside. Remove from heat and let rest.
- Make Sauce: In the same skillet, combine the barbecue sauce, honey, and hot sauce over low heat. Stir and warm until heated through.
- Coat Chicken: Shred the rested chicken using two forks and stir it into the warmed sauce until evenly coated.
- Prepare Skillet: Wipe out the skillet to remove excess sauce and return to medium heat for cooking quesadillas.
- Assemble Quesadilla: Place one tortilla in the skillet, sprinkle half the shredded cheddar cheese evenly over the surface, then add half of the sauced chicken and a few slices of red onion. Top with remaining cheese and cover with the second tortilla.
- Cook Quesadilla: Cook for 2 to 3 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip and cook the other side for another 2 minutes until golden and cheese fully melted.
- Serve: Transfer the quesadilla to a cutting board, slice into wedges, and garnish with chopped fresh cilantro before serving warm.

- Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
- You can adjust the hot sauce quantity to make it more or less spicy to your taste.
- Use a nonstick skillet or lightly grease the pan to prevent sticking.
