Description

  • 1 cup sauerkraut (drained and patted dry)
  • 1 pound pastrami (thinly sliced)
  • 8 slices rye bread
  • 2 tablespoons unsalted butter (softened)
  • ยฝ cup Thousand Island dressing (or Russian dressing)
  • 8 slices Swiss cheese


Instructions

  1. Drain Sauerkraut: Add the sauerkraut to a fine mesh strainer and press down with a paper towel to remove excess liquid. Alternatively, use multiple paper towels to press and drain the sauerkraut. Set aside to ensure the sandwich does not get soggy.
  2. Prepare Bread: Spread softened unsalted butter on one side of each bread slice. Flip the slices and spread 1 tablespoon of Thousand Island dressing on the other side of each slice.
  3. Assemble Sandwiches: On the Thousand Island dressing side, layer a slice of Swiss cheese on all bread slices. On half of the bread slices, add the thinly sliced pastrami and drained sauerkraut on top of the cheese. Then top with another slice of bread, cheese side down, to complete the sandwich.
  4. Grill Sandwiches: Heat a skillet or griddle pan over medium heat. Place the sandwiches on the pan and cook for 3-4 minutes until the bread is golden and crisp. Flip carefully with a spatula and cook for another 3-4 minutes, or until the cheese is fully melted and the other side is browned.
  5. Serve: Remove the sandwiches from the skillet and serve immediately while hot and melty.

Notes

  • Make sure to drain the sauerkraut well to avoid soggy sandwiches.
  • Use rye bread for an authentic flavor, but substitute with your preferred bread if needed.
  • You can substitute Thousand Island dressing with Russian dressing if you prefer a spicier flavor.
