Ingredients
Scale
Crab Filling
- 1/4 pound crab meat (thawed)
- Juice and zest of 1 lime
- 1 jalapeño, chopped
- 1 green onion, chopped
- 1 handful cilantro, chopped
- 1 teaspoon cumin, toasted and ground
- Salt and pepper to taste
Quesadillas
- 2 flour tortillas
- A touch of butter or oil
- 1/2 cup Monterey Jack cheese, grated
Instructions
- Cook Crab Meat: Boil the crab meat in a pot of water for about 3 minutes, then rinse it in cold water to stop the cooking process.
- Prepare Crab: Remove any shell pieces and cut the crab meat into bite-sized pieces for easier eating.
- Marinate Crab Mixture: In a bowl, combine lime juice, lime zest, chopped jalapeño, green onion, cilantro, toasted cumin, salt, and pepper. Add the crab meat and let it marinate for 10 to 30 minutes to infuse the flavors.
- Toast Tortillas: Heat a small amount of butter or oil in a skillet over medium heat. Place one tortilla in the skillet and cook until air pockets form, flipping as needed to toast both sides. Repeat with the second tortilla.
- Assemble Quesadilla: Drain any excess liquid from the crab mixture to prevent sogginess, then spread it evenly over one toasted tortilla in the skillet. Sprinkle the grated Monterey Jack cheese on top, then place the second tortilla on top to form a sandwich.
- Cook Quesadilla: Cook the assembled quesadilla until golden brown on the bottom and the cheese begins to melt, then carefully flip to brown the other side and finish melting the cheese.
- Serve: Remove from heat and serve immediately while warm and gooey for best enjoyment.
Notes
- Be sure to drain excess liquid from the crab marinade to keep quesadillas from becoming soggy.
- Adjust jalapeño quantity based on your preferred level of spiciness.
- Toast the tortillas lightly before assembling to add extra texture and prevent sogginess.
- You can substitute Monterey Jack with other meltable cheeses like mozzarella or cheddar if preferred.
- Serve with sour cream, salsa, or guacamole on the side for added flavor.
