Description

These Lucky Charms Bars are a fun and nostalgic treat combining the classic cereal with a gooey marshmallow mixture to create chewy, colorful bars perfect for snacks or parties. Easy to make and ready in under an hour, they’re a delightful twist on traditional rice cereal treats.

Marshmallow Mixture

  • 1/3 cup unsalted butter
  • 1 (10-ounce) package miniature marshmallows, divided
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

  • 1/2 cup Lucky Charms marshmallows (optional, for topping)


Instructions

  1. Prepare the Pan: Generously grease a 9×13-inch pan with cooking spray and set it aside to ensure the bars do not stick once poured in.
  2. Make Marshmallow Mixture: In a large nonstick pot, melt the butter over medium-low heat. After the butter has fully melted, reduce the heat to low and add 6 cups of miniature marshmallows. Stir continuously with a heat-resistant spatula until they are completely melted and the mixture is smooth. Do not increase the heat, as this could cause the bars to become hard.
  3. Finish Mixture: Remove the pot from heat and stir in the vanilla extract and salt. Add the Lucky Charms cereal to the pot and gently fold it into the marshmallow mixture until well coated. Then add the remaining marshmallows and stir just enough to distribute them evenly without fully melting.
  4. Press into Pan: Transfer the mixture into the prepared pan. Using hands sprayed with cooking spray to prevent sticking, gently press the mixture evenly into the pan. Sprinkle the optional Lucky Charms marshmallows on top and press them gently into the surface for decoration.
  5. Allow Bars to Set: Let the bars cool completely at room temperature for about 30 minutes until firm. Once set, use a sharp knife to cut the mixture into squares for serving.

Notes

  • Using low heat for melting marshmallows prevents making the bars too hard.
  • Spraying your hands with cooking spray helps to press the mixture without it sticking.
  • Optional marshmallow topping adds extra color and texture but can be omitted.
  • Store bars in an airtight container at room temperature for up to 3 days for best freshness.
