Description

Classic and irresistible Lunch Lady Brownies with a rich chocolate flavor, topped with a smooth, creamy chocolate frosting. Perfectly moist and fudgy brownies baked to perfection and generously frosted for a delicious treat.

Ingredients

Scale

Brownies

  • 1 cup salted butter (melted)
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract

Chocolate Frosting

  • 1/4 cup salted butter (softened)
  • 1/4 cup 2% milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350ยฐF (175ยฐC). Line a 9×13-inch baking dish with parchment paper and spray it with non-stick spray to ensure easy removal of the brownies.
  2. Mix Brownie Batter: In the bowl of an electric stand mixer, combine the melted butter and 1/2 cup of unsweetened cocoa powder. Using the paddle attachment, mix until the mixture is smooth and even.
  3. Add Dry Ingredients and Eggs: Add the all-purpose flour and granulated sugar to the cocoa mixture. Beat briefly to combine, then add the eggs and vanilla extract. Mix just until combined to avoid overmixing. The batter will be thick.
  4. Bake Brownies: Pour the batter into the prepared baking dish and spread evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow brownies to stand for 15 minutes; they should still be warm when frosting.
  5. Prepare Frosting: Beat together the softened butter, 2% milk, unsweetened cocoa powder, and powdered sugar until the frosting is smooth and creamy.
  6. Frost Brownies: Pour the frosting over the warm brownies and spread evenly. Let the brownies cool completely before cutting and serving to allow the frosting to set.

Notes

  • For fudgier brownies, consider slightly reducing the flour or adding an extra egg yolk.
  • Make sure not to overmix the batter to keep the brownies tender.
  • Use room temperature eggs for better mixing.
  • Ensure the brownies are still warm before frosting to help the frosting spread smoothly.
  • Store brownies in an airtight container at room temperature for up to 4 days.
