Description

These Marinated Grilled Mushroom Skewers feature button mushrooms soaked in a flavorful blend of olive oil, soy sauce, balsamic vinegar, and aromatic herbs, then grilled to perfection. Perfect as a vegetarian appetizer or side dish, they’re juicy, smoky, and packed with savory umami notes.

Ingredients

Scale

Marinade

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Main Ingredients

  • 1 pound button mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, dried thyme, dried rosemary, smoked paprika, salt, and freshly ground black pepper until well combined and smooth.
  2. Marinate the Mushrooms: Place the cleaned and trimmed button mushrooms in the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, ideally 2-3 hours to allow the flavors to deeply infuse.
  3. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning. Metal skewers do not need soaking.
  4. Preheat the Grill: Heat your grill to medium-high heat, ensuring the grill grates are clean and lightly oiled to prevent sticking.
  5. Assemble the Skewers: Thread the marinated mushrooms onto the skewers, spacing them slightly apart to allow even cooking and heat circulation.
  6. Grill the Mushrooms: Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally to achieve even grill marks and cook through. The mushrooms should be tender and slightly charred when done.
  7. Serve and Enjoy: Remove the skewers from the grill, optionally garnish with fresh parsley or herbs of choice, and serve warm as an appetizer or side dish.

Notes

  • For a vegan option, use maple syrup instead of honey and confirm Worcestershire sauce is vegan-friendly or substitute with tamari.
  • Button mushrooms can be substituted with cremini or baby bella mushrooms for a deeper flavor.
  • Ensure skewers are soaked well if wooden to avoid catching fire on the grill.
  • To add extra flavor, sprinkle chopped fresh herbs like parsley or cilantro before serving.
  • These skewers can also be cooked on a stovetop grill pan if an outdoor grill is unavailable.
