Description

Mini Cheese Ball Bites are creamy, flavorful appetizer balls made from a blend of cream cheese, sharp cheddar, Parmesan, and aromatic spices, coated with crunchy nuts, fresh herbs, or crispy bacon bits. Perfect for parties and gatherings, these bite-sized treats are chilled for rich texture and are served chilled with crackers or veggies.

Ingredients

Scale

Cheese Mixture

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp black pepper

Coatings

  • 23 tbsp chopped fresh herbs (parsley, chives, or dill)
  • 1 cup finely chopped nuts (pecans, walnuts, or almonds)
  • 1 cup chopped fresh herbs (optional)
  • ½ cup crispy bacon bits (optional)

Instructions

  1. Mix Cheese Base: Combine cream cheese, shredded sharp cheddar, Parmesan, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, salt, and black pepper in a bowl. Mix thoroughly until the mixture is smooth and fully combined to ensure even flavor throughout.
  2. Chill Mixture: Cover the bowl and chill the cheese mixture in the refrigerator for 30 minutes. Chilling firms up the mixture, making it easier to shape into balls.
  3. Form Cheese Balls: Using a tablespoon, scoop portions of the chilled cheese mixture and roll each portion between your palms to form smooth, even-sized balls.
  4. Prepare Coatings: Place chopped nuts, fresh herbs, and crispy bacon bits each into separate bowls to create different textural coating options.
  5. Coat Cheese Balls: Roll each cheese ball in the desired coating(s), pressing gently to help the coating adhere well and create a flavorful crust around the cheese.
  6. Chill Cheese Balls Again: Arrange the coated cheese balls on a serving platter or tray. Refrigerate them for at least 1 hour before serving to allow them to set and flavors to meld.
  7. Serve: Present the chilled mini cheese balls with an assortment of crackers, slices of bread, or fresh vegetable sticks for a delightful appetizer experience.

Notes

  • Chilling the mixture before shaping ensures easier handling and a firmer texture.
  • You can mix and match coatings or combine multiple coatings on a single cheese ball for variety.
  • Use finely chopped nuts and herbs to help coatings stick better.
  • Store leftover cheese balls in an airtight container in the refrigerator for up to 3 days.
  • For a vegetarian version, omit bacon bits or replace with smoked paprika or additional herbs for smoky flavor.
  • Serve cheese balls chilled for best texture and flavor.
