Description

Wet Ingredients

  • 2 cups mashed banana (240g)
  • 1/2 cup pure maple syrup (or honey or agave) (120g)
  • 1/3 cup coconut oil (or water) (80g)
  • 1 tsp pure vanilla extract (5g)


Instructions

  1. Preheat Oven: Preheat the oven to 350ยฐF (175ยฐC). Prepare a 9×5 inch loaf pan by greasing it or lining the bottom with parchment paper to prevent sticking.
  2. Mix Ingredients: In a large bowl, stir together the oat flour, rolled oats, baking soda, baking powder, salt, and cinnamon. Add the mashed banana, pure maple syrup, coconut oil, and vanilla extract. Mix until just evenly combined, taking care not to overmix for a tender crumb.
  3. Prepare for Baking: Pour the batter into the prepared loaf pan and smooth the top evenly. If using, sprinkle chocolate chips on top before baking.
  4. Bake: Place the loaf pan in the preheated oven and bake for 35 minutes, or until a toothpick inserted into the center comes out mostly clean with only a few moist crumbs.
  5. Cool and Serve: Remove the bread from the oven and allow it to cool completely in the pan. Once cooled, run a knife around the edges to loosen it, then transfer the bread onto a serving plate. Slice and enjoy.
