Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the tacos later.

  3. Season the Beef: Add 1 packet taco seasoning and 1/2 cup water to the browned beef. Simmer the mixture for 5 minutes, stirring occasionally, until it thickens and is flavorful.
  4. Warm Tortillas: Heat the 8 small corn tortillas for about 30 seconds in a microwave until they become flexible and easier to fold without cracking.
  5. Assemble Tacos: Divide the seasoned beef evenly among each tortilla.
  6. Add Cheese Inside: Sprinkle 1 1/2 cups of shredded Mexican cheese blend evenly over the beef inside the tortillas.
  7. Arrange in Baking Dish: Stand the tacos upright in a baking dish to maintain their shape and allow even baking.
  8. Add Cheese on Top: Sprinkle the remaining 1/2 cup shredded cheese on top of the tacos for an extra cheesy crust.
