Crust
- 1 1/4 cups (156 g) all-purpose flour

- 1/4 cup (60 ml) light corn syrup
- 1/4 cup (50 g) brown sugar, packed
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup (60 g) chopped pecans
Instructions
- Preheat Oven and Prepare Tin: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
- Make the Dough: In a medium bowl, combine the all-purpose flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Add Water and Form Dough: Incorporate cold water one tablespoon at a time, mixing just until the dough comes together. Avoid overmixing to keep the dough tender.
- Roll and Cut Dough Circles: On a floured surface, roll out the dough to approximately 1/8-inch thickness. Use a round cutter or glass rim to cut circles slightly larger than the muffin tin openings.
- Press Dough into Tin: Gently press each dough circle into the prepared mini muffin tin, forming the crust for each bite.
- Prepare Filling: In a small bowl, whisk together the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth.
- Assemble Pies: Spoon about 1 teaspoon of chopped pecans into each crust, then pour approximately 1 tablespoon of the filling mixture over the nuts, covering them evenly.
- Bake: Place the muffin tin in the oven and bake for 20-25 minutes, or until the filling is set and the crust is golden brown.
- Cool: Allow the pecan pie bites to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
