  • 1/4 cup (60 ml) light corn syrup
  • 1/4 cup (50 g) brown sugar, packed
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup (60 g) chopped pecans


Instructions

  1. Preheat Oven and Prepare Tin: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
  2. Make the Dough: In a medium bowl, combine the all-purpose flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  3. Add Water and Form Dough: Incorporate cold water one tablespoon at a time, mixing just until the dough comes together. Avoid overmixing to keep the dough tender.
  4. Roll and Cut Dough Circles: On a floured surface, roll out the dough to approximately 1/8-inch thickness. Use a round cutter or glass rim to cut circles slightly larger than the muffin tin openings.
  5. Press Dough into Tin: Gently press each dough circle into the prepared mini muffin tin, forming the crust for each bite.
  6. Prepare Filling: In a small bowl, whisk together the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth.
