Puff Pastry Base
- 1 sheet puff pastry
Egg Mixture
- 4 large eggs
- Salt and pepper, to taste

- 1 ½ cups freshly grated Colby-Jack cheese
- 2 to 4 slices cooked bacon, diced into ½ inch pieces
- Fresh chives, chopped, for garnish
Instructions
- Preheat and prepare baking sheet: Position the oven rack in the middle of the oven and preheat to 400°F (200°C). Line a large baking sheet with parchment paper and set aside.
- Prepare puff pastry: Thaw the puff pastry sheet as per package instructions. Roll it out gently into a 10×10-inch square. Carefully lift the puff pastry and place it onto the prepared baking sheet.
- Create pastry border: Fold one edge of the puff pastry over ½ inch, then fold it again another ½ inch to form a tight border. Repeat this folding process on all edges to create a raised border that will hold the filling.
- Add eggs and secure border: Crack the eggs directly onto the center of the puff pastry, spreading them evenly within the border. Use a pastry brush to dip into the egg whites and brush over the edges of the folded border to help seal the corners firmly.
- Season and add toppings: Season the eggs well with salt and freshly ground pepper. Evenly sprinkle the grated cheese over the eggs, then add the diced cooked bacon on top.
- Bake the tart: Place the baking sheet in the preheated oven and bake for about 18 minutes, or until the puff pastry edges are golden brown and puffed, and the eggs are set.
- Garnish and serve: Remove the tart carefully from the oven. Sprinkle the chopped fresh chives over the top. Cut into squares and serve warm for a delightful breakfast or brunch.

- Allow the puff pastry to thaw completely before rolling to prevent cracking.
- Use cold eggs for easier cracking and spreading over the pastry.
