Description

This comforting Roasted Garlic Potato Soup combines tender potatoes and the rich, mellow flavor of roasted garlic in a creamy vegetable broth base. A perfect warm soup to enjoy on chilly days, it’s easy to prepare and packed with wholesome ingredients that make it both hearty and delicious.

Ingredients

Scale

Vegetables

  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 large head roasted garlic
  • 4 large potatoes, peeled and cubed
  • 1 tablespoon fresh parsley, chopped

Liquids and Oils

  • 2 tablespoons olive oil
  • 4 cups vegetable broth

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Sauté Onions: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté it until it becomes soft and translucent, approximately 8 minutes, allowing the natural sweetness of the onion to develop.
  2. Add Garlic: Stir in the minced garlic and cook for one more minute to release its aromatic flavor, being careful not to let it burn.
  3. Add Broth and Boil: Pour in 4 cups of vegetable broth and bring the mixture to a boil, creating a flavorful base for the soup.
  4. Add Potatoes and Seasonings: Add the peeled and cubed potatoes, chopped parsley, salt, and pepper to the boiling broth. Return to a boil.
  5. Simmer Until Tender: Reduce the heat to a simmer and cook the soup until the potatoes are tender, about 15 to 20 minutes, stirring occasionally to prevent sticking.
  6. Add Roasted Garlic: Stir in the large head of roasted garlic, incorporating its mellow flavor throughout the soup.
  7. Blend for Thickness: For a thicker texture, mash some of the potato pieces with a spoon or use an immersion blender to blend the soup until it reaches your desired consistency.
  8. Serve: Ladle the hot soup into bowls and serve immediately. Optionally, garnish with croutons or a sprinkle of cheese for added texture and flavor.

Notes

  • Roasting the garlic beforehand mellows its flavor and adds depth to the soup.
  • For a creamier texture without dairy, use an immersion blender to puree the soup partially or fully.
  • Feel free to substitute vegetable broth with chicken broth if preferred.
  • Adjust salt and pepper to your taste preferences.
  • This soup pairs beautifully with crusty bread or a fresh green salad.
