Description

A quick and creamy Rotel Dip made with ground beef, taco seasoning, Velveeta cheese, and Rotel tomatoes. Perfect for gatherings, this cheesy and flavorful dip comes together in just 15 minutes and is ideal served warm with tortilla or corn chips.

Ingredients

Scale

Meat

  • 1 pound ground beef

Seasoning

  • 2 tablespoons taco seasoning (homemade or store-bought)

Dairy & Cheese

  • 16 ounces Velveeta cheese, cubed

Vegetables

  • 10 ounces Rotel (diced tomatoes with green chilies)

Instructions

  1. Cook the Ground Beef: Place a large skillet on the stove over medium-high heat. Add the ground beef, crumble it with a spatula, and cook until no longer pink. Drain any excess grease from the skillet to reduce fat content.
  2. Add Ingredients for the Dip: Return the skillet to medium heat, then add the taco seasoning, cubed Velveeta cheese, and the entire can of Rotel tomatoes with juices.
  3. Melt and Combine: Stir constantly to ensure the cheese melts evenly and the mixture becomes smooth and creamy, fully incorporating all ingredients.
  4. Serve Warm: Transfer the dip to a serving bowl and serve immediately, or for extended warming, transfer to a Crock-Pot slow cooker set on warm for up to six hours to keep the dip hot and melty.
  5. Pair and Enjoy: Serve with tortilla chips or corn chips for dipping and enjoy this delicious, cheesy appetizer perfect for parties or casual snacking.

Notes

  • For a spicier dip, use hot Rotel instead of mild.
  • You can substitute ground turkey or chicken for a leaner option.
  • If preferred, homemade taco seasoning can be used to control sodium and ingredients.
  • Leftovers can be stored in the refrigerator and reheated gently on the stovetop or microwave.
  • To keep dip warm for parties, using a slow cooker on warm setting is ideal.
